The sweet potato was introduced to Okinawa around the 17th century from China. It has a sweet appetizing flavor, a good source of Vitamin C and fiber, and is said to possess an antioxidant quality.
The sweet potato has a light, whitish skin with lavender flesh than turns a deep purple when cooked.
